I would leave the dash pad as-is. Gives a certain uniqueness to the interior. You could not get that shape if you had wanted to.

The back of that roof sure looks rough...pretty clean interior and engine bay, but that roof (and sunroof edges) would be quite concerning, but quite complete to my eye...

Yeah, the front edge of the sunroof looks rough. It would be tough to replace.
